Ingredients

  • Ground Beef: ½ lb 250g
  • Flour Tortillas: 3 large burrito size
  • Yellow Onion: 1 medium finely diced
  • Red Bell Pepper: 1 finely diced
  • Green Bell Pepper: 1 finely diced
  • Mozzarella Cheese: 1.5 cups shredded
  • Seasonings: Salt black pepper, garlic powder, and a dash of cumin or chili powder

Instructions

  • Sauté the Filling: In a large skillet over medium-high heat, brown the ground beef. Add the diced onion, red pepper, and green pepper. Sauté until vegetables are soft and onions are translucent. Season generously and drain any excess grease.
  • Prepare Tortillas: Lay tortillas flat. To prevent cracking during folding, Submerged in water them for 10 seconds to soften.
  • The Center Slice: Using a knife or pizza cutter, make one single cut from the exact center of the tortilla straight down to the bottom edge.
  • Layer the Quadrants: Mentally divide the tortilla into four quarters. Place the beef mixture in two quadrants and the shredded mozzarella in the other two.
  • The Triangle Fold: Start at the cut edge. Fold the first quadrant over the second, then the second over the third, and finally the third over the fourth until you have a thick, layered triangle.
  • Top with Cheese: Place the folded wraps on a parchment-lined baking sheet. Sprinkle the remaining mozzarella over the tops to create a crispy cheese crust.
  • Bake: Slide into a preheated oven at 180°C (350°F). Bake for 10–12 minutes until the tortillas are golden brown and the cheese is bubbly.
  • Serve: Let rest for 2 minutes before slicing or serving whole.
