Scallion Oil Pork Chops: A Weeknight Dinner That Tastes Like a Restaurant Meal

Ingredients

  • 2 pork chops
  • 2 tablespoons soy sauce
  • 1 tablespoons oyster sauce
  • 0.5 teaspoons salt for pork
  • 1 teaspoons cornstarch
  • 0.5 teaspoons white pepper for pork
  • 2 fresh ginger slices
  • 6 green onion stalks chopped
  • 1 knob fresh ginger grated
  • 1 teaspoons sesame seeds
  • 0.5 teaspoons salt for scallion oil
  • 0.5 teaspoons white pepper for scallion oil
  • 0.3 cups cooking oil

Instructions

  • Tenderize the pork: Use the back of a knife to lightly pound 2 pork chops to break down fibers and keep the meat tender.
  • Marinate the pork: Mix pork with 2 tablespoons soy sauce, 1 tablespoons oyster sauce, 0.5 teaspoons salt (for pork), 1 teaspoons cornstarch, 0.5 teaspoons white pepper (for pork), and 2 fresh ginger slices. Let sit to absorb flavor.
  • Make the scallion oil: Combine 6 green onion stalks, chopped, 1 knob fresh ginger, grated, 1 teaspoons sesame seeds, 0.5 teaspoons salt (for scallion oil), 0.5 teaspoons white pepper (for scallion oil), and 0.3 cups cooking oil in a bowl. Mix well and set aside.
  • Sear the pork chops: Heat a pan over medium heat with a bit of oil. Cook the marinated pork chops until golden and cooked through, about 8 minutes
  • per side.
  • Add scallion oil and infuse: Spoon the scallion oil over the pork chops. Cover with a lid and cook on medium-low heat to infuse flavor.
  • Slice and serve: Cut the pork into pieces and serve over hot rice, spooning extra scallion oil on top.
