Rice Cheese Balls: The Perfect Way to Use Up Leftover Rice

Leftover rice and mashed potatoes shaped around a gooey cheese center, coated in breadcrumbs, and fried until golden brown.

Ingredients

  • 2 cups leftover rice
  • 1 cups mashed potatoes
  • 0.5 cups carrots and green beans finely chopped
  • 1 teaspoons Italian seasoning
  • 1 tablespoons ginger chili paste
  • 0.5 teaspoons salt
  • 12 cheese cubes
  • 3 tablespoons all-purpose flour maida
  • 0.5 cups water approx.
  • 0.5 cups breadcrumbs
  • 2 cups oil for frying

Instructions

  • Mix the dough: In a bowl, mix together 2 cups leftover rice, 1 cups mashed potatoes, 0.5 cups carrots and green beans, finely chopped, 1 teaspoons Italian seasoning, 1 tablespoons ginger chili paste, and 0.5 teaspoons salt until well combined.
  • Shape the dough: Grease your hands with oil, pinch out a small portion of dough, and flatten it in your palm.
  • Add the cheese: Place a 12 cheese cubes in the center and seal the dough carefully around it.
  • Coat it well: Whisk 3 tablespoons all-purpose flour (maida) and 0.5 cups water (approx.) into a smooth slurry. Dip each ball in the slurry, then coat with 0.5 cups breadcrumbs. Double coat for extra crispness.
  • Fry until golden: Heat 2 cups oil, for frying and fry the balls until golden brown on the outside.
  • Serve: Serve warm with ketchup or your favorite dip and enjoy!
