Ingredients

  • For the Mini Frittatas:
  • 1 cup mixed bell peppers any color combination, finely chopped
  • 1/2 cup cherry tomatoes finely chopped
  • 220 g 8 oz garlic and herb cream cheese (Boursin, Alouette, or similar flavored cream cheese spread)
  • 8 large eggs
  • 1.5 cups fresh spinach roughly chopped
  • Salt and pepper to taste
  • For Baking:
  • Nonstick cooking spray or butter for greasing muffin tin

Instructions

  • Preheat and Grease:
  • Preheat oven to 375°F
  • Grease standard 12-cup muffin tin thoroughly with nonstick cooking spray or light brush of butter
  • Make sure to coat each cup generously to ensure clean release after baking
  • Beat Eggs with Cream Cheese:
  • Crack all 8 eggs into large bowl
  • Add 220g garlic and herb cream cheese
  • Beat everything together until cream cheese is as fully incorporated as possible
  • Small pieces of cream cheese remaining are fine - they will melt and distribute during baking
  • Prep and Add Vegetables:
  • Finely chop mixed bell peppers
  • Finely chop cherry tomatoes
  • Roughly chop fresh spinach
  • Add all chopped vegetables to egg and cream cheese mixture
  • Season with salt and pepper to taste
  • Stir to combine everything evenly
  • Fill the Muffin Tin:
  • Pour or ladle egg and vegetable mixture evenly into greased muffin tin cups
  • Fill each cup approximately three-quarters full (leave room for puffing during baking)
  • Do not overfill or frittatas may overflow
  • Bake:
  • Bake at 375°F for 15-20 minutes
  • Check at 15 minutes (ovens vary)
  • Frittatas are done when set in center, lightly golden around edges, and puffed slightly
  • Toothpick inserted into center should come out clean
  • Pull from oven as soon as centers are just set (avoid overbaking for rubbery texture)
  • Cool and Release:
  • Let frittatas cool in muffin tin for few minutes before removing
  • Run knife or thin spatula around edges of each cup to help release
  • Pop frittatas out of tin
  • Serve warm, at room temperature, or save for later
  • Critical Tips:
  • Grease muffin tin generously (difference between clean release and frittatas sticking/tearing)
  • Chop vegetables as finely as possible (larger pieces create uneven pockets and harder to eat)
  • Don't overfill muffin cups (only three-quarters full for proper puffing)
  • Check at 15 minutes for doneness (avoid overcooking)
  • Let cool slightly before removing (more fragile when hot, easier to remove when slightly firm)
  • Storage:
  • Refrigerate: Store in airtight container for up to 4 days
  • Eat cold from fridge, warm for 30 seconds in microwave, or bring to room temperature
  • Freeze: Arrange cooled frittatas on baking sheet, freeze until solid, transfer to freezer bag for up to 2 months
  • Reheat from frozen: Microwave 60-90 seconds
  • Variations and Substitutions:
  • Different cream cheese: Use plain cream cheese (add garlic powder, dried herbs, onion powder for seasoning), chive and onion cream cheese, or dairy-free cream cheese alternative
  • Additional vegetables: Finely diced zucchini, mushrooms, sun-dried tomatoes, caramelized onions
  • High water content vegetables: Sauté briefly first to remove excess moisture
  • Other mix-ins: Crumbled cooked sausage, bacon pieces, different herbs
  • Add cheese topping: Sprinkle shredded cheddar, mozzarella, or crumbled feta on top before baking
  • Large frittata: Pour entire mixture into greased 9-inch oven-safe skillet, bake 20-25 minutes, slice into wedges
  • Serving Suggestions: Serve warm alongside simple green salad for light lunch. Pack into picnic basket with fruit, crackers, and cheese. Add to brunch table with fresh fruit and toast. Grab from refrigerator for fast, protein-rich breakfast. Perfect for meal prep - have ready-to-go option all week.
  • Doneness Check: Tops should look set and not jiggly when pan is gently shaken. Lightly golden around edges and slightly puffed in center. Toothpick inserted into center comes out clean with no wet egg.
  • Meal Prep: One of best meal prep recipes because stores and reheats so well. Perfect for busy weeks and grab-and-go meals.
