Loaded Protein Packed Bean Wrap

Ingredients

  • 1 tsp olive oil
  • cup white onion chopped
  • 1 jalapeño finely chopped
  • 2 15 oz black beans drained and rinsed
  • ¾ cup tomato chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp salt
  • 2 Tbsp hot sauce
  • 6 large tortillas burrito size
  • 6 tostadas
  • 6 fajita size tortillas to close the wrap
  • cup sour cream
  • cup cheese shredded
  • cup romaine shredded
  • ½ cup salsa optional
  • 1 avocado sliced thin (optional)
  • 2 Tbsp cilantro chopped

Instructions

  • Step 1: Prep the Aromatics
  • Before applying heat, get your "mise en place" ready. Rinse the beans to remove the starchy liquid. Dice your onions, tomatoes, and jalapeños. If you’re using avocado, slice it thin so it doesn't create a "lump" in your wrap.
  • Step 2: Sauté and Simmer
  • Heat the olive oil in your large skillet over medium heat. Toss in the onions and sauté for 3 minutes until they begin to soften and look translucent. Add the black beans, tomatoes, jalapeños, and the entire spice blend (garlic powder, chili powder, paprika, cumin, and salt). Pour in the hot sauce and stir well. Let this mixture simmer for 3–5 minutes. This allows the tomatoes to break down and the beans to absorb the spices. Turn off the heat and set aside.
  • Step 3: The Assembly Line
  • This is where the magic happens. Place a large burrito tortilla on a flat surface.
  • The Base: Place a generous scoop of the warm black bean mixture in the center.
  • The Creamy Layer: Sprinkle cheese over the beans, followed by a dollop of sour cream.
  • The Fresh Layer: Add your shredded romaine and thin slices of avocado.
  • The Crunch: Place the tostada directly on top of the lettuce. This protects the lettuce from the hot beans and keeps it crisp!
  • The Seal: Place a small fajita-sized tortilla on top of the tostada. Fold the edges of the large tortilla inward, pleating them over the small tortilla until the wrap is fully enclosed.
  • Step 4: The Searing Process
  • Heat a clean pan over medium heat with a light coating of oil or cooking spray. Carefully place the wrap folded-side down into the pan.
  • Pro Tip: If the folds want to pop open, place a heavy bowl or plate on top of the wrap for the first minute to "press" it closed.
  • Step 5: Toast to Perfection
  • Cook for 2–3 minutes on the first side. When you flip it, you should see a beautiful, sealed, golden-brown hexagon. Toast the other side for another 2–3 minutes.
  • Step 6: Garnish and Serve
  • Repeat for the remaining five wraps. Slice them down the middle and serve immediately while the tostada is at its maximum crunch level. Top with fresh salsa and cilantro.
