Honey Balsamic Roasted Carrots: A Fall Side Dish You'll Make Again and Again

- 2 lbs carrots
- 3 tablespoons avocado oil or olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey
- 3 garlic cloves minced
- 1 teaspoons dried thyme
- 0.5 teaspoons salt
- 0.3 teaspoons black pepper
- 2 tablespoons goat cheese crumbled (optional)
Prep the carrots: Preheat oven to 400°F. Wash and trim 2 lbs carrots, slicing thicker ones in half lengthwise so they cook evenly.
Mix the glaze: In a bowl, whisk together 3 tablespoons avocado oil (or olive oil), 2 tablespoons balsamic vinegar, 2 tablespoons honey, 3 garlic cloves, minced, and 1 teaspoons dried thyme. Season with 0.5 teaspoons salt and 0.3 teaspoons black pepper.
Toss the carrots: Add the carrots to the bowl and toss until fully coated in the glaze.
Roast to perfection: Spread carrots in a single layer on a lined baking sheet and roast until tender inside and caramelized on the edges.
Finish and serve: Remove from the oven, top with 2 tablespoons goat cheese, crumbled (optional) if using, and serve warm.
