- 3 large chicken breasts sliced into a total of 6 thin cutlets
- 1 tablespoon olive oil
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
- 6 flaxseed flour flat breads or your favorite tortilla wraps see note 1
- 1 ½ cups shredded monteray jack and cheddar cheese blend
- 12 romaine lettuce leaves shredded
- Avocado lime ranch dressing or other dressing optional, for serving, see note 2
Fire Up the Grill
Coat your thin chicken cutlets in olive oil and a generous pinch of salt and pepper. Preheat your grill (outdoor gas/charcoal or an indoor grill pan) to medium-high. Grill for 2–3 minutes per side. You’re looking for an internal temperature of 165°F (74°C).
Pro Tip: Let the chicken rest for 5–10 minutes after grilling. This allows the juices to redistribute so your wrap doesn't get soggy.
Slice for Success
Once rested, slice the chicken into strips against the grain. This makes the wrap much easier to bite through.
Prep the Tortilla
Warm your flaxseed wraps in the microwave for 10–15 seconds. A warm wrap is pliable and won't crack when you start rolling.
Assemble and Fold
Lay the flatbread down and spread a layer of shredded lettuce in the center. Follow with the cheese blend and the sliced grilled chicken.
