Cucumber Watermelon Lemonade The Fresh, Minty, No Added Sugar Summer Drink

Most people have made watermelon drinks before. Fewer people have thought to combine watermelon with cucumber and once you taste this combination, it becomes immediately obvious why it works so well.

Ingredients

  • For the Base:
  • 1 cup fresh cucumber roughly chopped (English or Persian cucumber - no need to peel)
  • 4 cups fresh seedless watermelon flesh cubed (approximately half a small watermelon)
  • 10 grams honey approximately 1½ teaspoons - raw wildflower or clover honey
  • Fresh lemon juice to taste approximately 2 tablespoons - always fresh-squeezed
  • Fresh lime juice to taste approximately 1 tablespoon - always fresh-squeezed
  • Handful of fresh mint leaves approximately 8-10 leaves, plus extra for garnish
  • For Serving:
  • Additional watermelon cubes
  • Sprite or lemon-lime sparkling soda approximately 4-6 oz per glass
  • Club soda or plain sparkling water for less sweet version
  • Ice cubes generous amount
  • Fresh mint sprigs for garnish
  • Cucumber wheels or watermelon wedges for rim garnish

Instructions

  • Blend the Watermelon and Cucumber:
  • Place roughly chopped cucumber into high-powered blender
  • Add 4 cups cubed watermelon flesh
  • Blend on high speed until completely smooth and uniform
  • Mixture should be vivid pink-red color with cucumber fully incorporated and invisible
  • Blend for full 30-60 seconds to ensure everything is thoroughly pureed
  • Add Honey and Citrus:
  • Add honey directly to blended watermelon-cucumber mixture in blender
  • Add fresh lemon juice (approximately 2 tablespoons)
  • Add fresh lime juice (approximately 1 tablespoon)
  • Blend again briefly for 10-15 seconds to mix honey and citrus evenly into base
  • Taste and adjust: add more lime for tropical brightness, more lemon for sharper punch, or more honey if watermelon isn't sweet enough
  • Strain if Desired:
  • For cleaner, clearer drink without pulp or foam, pour blended mixture through fine-mesh strainer into large pitcher or bowl
  • Press pulp gently with back of spoon to extract as much liquid as possible
  • For thicker, smoothie-like drink, skip straining and use blended mixture directly
  • Add Fresh Mint:
  • Add generous handful of fresh mint leaves to watermelon-cucumber lemonade base
  • Either muddle mint briefly in bottom of pitcher (pressing with muddler or back of spoon to release mint oils)
  • OR simply add leaves to pitcher and stir vigorously
  • Mint will infuse cooling, aromatic flavor into drink within few minutes
  • Build the Glasses:
  • Fill tall, clear glasses generously with ice cubes
  • Add few fresh watermelon cubes to each glass (these look beautiful through clear glass and release additional watermelon juice as they soften)
  • Pour watermelon-cucumber lemonade base over ice and watermelon cubes
  • Fill each glass approximately two-thirds full
  • Top with Sprite and Garnish:
  • Top each glass with generous splash of Sprite or lemon-lime soda
  • Pour gently to preserve carbonation
  • DO NOT stir after adding soda (vigorous stirring dissipates bubbles quickly)
  • Garnish each glass with fresh sprig of mint pressed against inside of glass
  • Add thin cucumber wheel or small watermelon wedge on rim
  • Serve immediately
  • Critical Tips:
  • Use ripest, sweetest watermelon available (entire flavor foundation depends on fresh watermelon juice quality)
  • Always use fresh-squeezed citrus juice (bottled has flat, preserved quality)
  • Blend watermelon and cucumber thoroughly (chunks produce uneven texture and flavor)
  • Add Sprite last and pour gently (vigorous stirring knocks carbonation out within minutes)
  • Serve immediately after adding Sprite (carbonation is most lively at moment of pouring)
  • Add plenty of ice (drink designed to be served very cold)
  • Serving Suggestions: Serve in tall, clear glasses to show off vivid pink color, fresh mint, and watermelon cubes. For summer party, make large pitcher of base ahead and keep refrigerated - add Sprite and ice to individual glasses at serving time. For adult version, add small pour of white rum, vodka, or tequila before Sprite. For children's parties, make punch bowl version - multiply base ingredients, pour into large punch bowl over ice block, add Sprite, and float fresh mint and watermelon cubes on surface.
  • Watermelon and Cucumber Pairing: Watermelon (92% water, sweet) + Cucumber (higher water content, neutral flavor, cooling quality) = sophisticated, complex, refreshing drink more interesting than watermelon alone.
  • Optional Variations: Use club soda or plain sparkling water for less sweet version. Skip Sprite entirely for non-carbonated version. Add rum, vodka, or tequila for adult cocktail.
