Prepare for Baking:
Preheat oven to 400°F (200°C)
Line a baking sheet with parchment paper
Set aside
Make the Dough:
In a large mixing bowl, add all-purpose flour and baking powder
Add cottage cheese, crumbled feta cheese, and shredded mozzarella cheese
Crack in the eggs
Pour in olive oil and milk
Add salt and garlic powder
Add chopped fresh basil leaves
Mix everything together with a spoon until roughly combined
Knead the Mixture:
Use your hands to knead the mixture in the bowl
Continue kneading until all ingredients are fully combined and form a unified, cohesive mixture
The dough will be moist and slightly sticky—this is normal
Shape and Top:
Grease an ice cream scoop with a small amount of oil or cooking spray
Scoop portions of the mixture onto the prepared baking sheet
Space them about 2 inches apart (you should get approximately 18 scoops)
Sprinkle sesame seeds generously over the top of each bouiko
Bake:
Place baking sheet in preheated 400°F oven
Bake for 25 minutes or until the bouikos are golden brown on top
Check that they're firm to the touch and cooked through
Remove from oven and let cool on the baking sheet for 5 minutes
Serve:
Transfer to a serving plate
Serve warm or at room temperature
Pair with fresh salad or your favorite dipping sauce
Storage: Store cooled bouikos in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat in a 350°F oven for 5-10 minutes before serving.
