Ingredients

  • For the Cheesy Mediterranean Bites:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 5 oz 140g cottage cheese
  • 9 oz 250g feta cheese, crumbled
  • cups shredded mozzarella cheese
  • 2 large eggs
  • ¼ cup olive oil
  • ¼ cup milk whole or 2%
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 5-6 fresh basil leaves chopped
  • For Topping:
  • 1 tablespoon sesame seeds

Instructions

  • Prepare for Baking:
  • Preheat oven to 400°F (200°C)
  • Line a baking sheet with parchment paper
  • Set aside
  • Make the Dough:
  • In a large mixing bowl, add all-purpose flour and baking powder
  • Add cottage cheese, crumbled feta cheese, and shredded mozzarella cheese
  • Crack in the eggs
  • Pour in olive oil and milk
  • Add salt and garlic powder
  • Add chopped fresh basil leaves
  • Mix everything together with a spoon until roughly combined
  • Knead the Mixture:
  • Use your hands to knead the mixture in the bowl
  • Continue kneading until all ingredients are fully combined and form a unified, cohesive mixture
  • The dough will be moist and slightly sticky—this is normal
  • Shape and Top:
  • Grease an ice cream scoop with a small amount of oil or cooking spray
  • Scoop portions of the mixture onto the prepared baking sheet
  • Space them about 2 inches apart (you should get approximately 18 scoops)
  • Sprinkle sesame seeds generously over the top of each bouiko
  • Bake:
  • Place baking sheet in preheated 400°F oven
  • Bake for 25 minutes or until the bouikos are golden brown on top
  • Check that they're firm to the touch and cooked through
  • Remove from oven and let cool on the baking sheet for 5 minutes
  • Serve:
  • Transfer to a serving plate
  • Serve warm or at room temperature
  • Pair with fresh salad or your favorite dipping sauce
  • Storage: Store cooled bouikos in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat in a 350°F oven for 5-10 minutes before serving.
