Bell Pepper Stuffed Corn Uttapam: A Fun Twist on a Classic Favorite

Ingredients

  • 3 bell peppers
  • 0.5 cups fine semolina
  • 0.3 cups plain yogurt
  • 0.5 cups mixed veggies boiled sweet corn, bell peppers, onions
  • 0.5 teaspoons salt
  • 0.5 teaspoons red pepper flakes
  • 1 teaspoons pizza seasoning
  • 1 tablespoons fresh cilantro chopped
  • 0.3 cups water as needed
  • 2 tablespoons oil for cooking

Instructions

  • Slice the bell peppers: Cut 3 bell peppers into thick rings, about 1/2 inch wide, and set aside.
  • Make the batter: In a bowl, add 0.5 cups fine semolina (suji/sooji), 0.3 cups plain yogurt, 0.5 cups mixed veggies (boiled sweet corn, bell peppers, onions), 0.5 teaspoons salt, 0.5 teaspoons red pepper flakes, 1 teaspoons pizza seasoning, 1 tablespoons fresh cilantro, chopped, and 0.3 cups water (as needed). Mix well to make a smooth batter that's not too thick.
  • Let it rest: Set the batter aside to let the semolina soften and cook more evenly.
  • Heat the pan: Warm a griddle or flat skillet and lightly grease it with 2 tablespoons oil, for cooking. Place the bell pepper rings on the hot surface.
  • Fill the rings: Spoon the prepared batter into each bell pepper ring, filling evenly.
  • Cook until golden: Cook on medium heat until golden at the bottom, then flip gently and cook the other side until golden as well.
  • Serve: Serve warm with ketchup or your favorite dip and enjoy!
